摘要

为研究富硒金针菇对人体健康的影响,采用富硒栽培、全自动氨基酸分析仪、苯酚-硫酸法对金针菇子实体总糖、氨基酸的种类和含量进行测定研究。结果表明:金针菇子实体均含有总糖、总氨基酸和游离氨基酸17种,其中人体必需氨基酸7种。确定硒糖的最佳浸提温度80℃、浸提时间3 h、提取3次合并滤液;总糖菌盖、菌柄含量分别为40.31%、48.99%,硒含量为34.2355 μg/g。

Abstract

In order to study SeFlammulina velutipes on human health issues. Using selenium-rich cultivation, automatic amino acid analyzer, phenol-sulfuric acid method Flammulina velutipes total sugar, amino acids the type were content measured study. The results showed that: Flammulina velutipes fruiting bodies contained total sugar, 17 kinds of amino acids and free amino acids, including 7 kinds of essential amino acids. Determining the optimum leaching selenium sugar temperature 80℃, extraction time 3 h, extracted 3 times the combined filtrate; total sugar pileus, stipe contents were 40.31%, 48.99%, selenium content of 34.2355 μg/g.
