摘要： 生物抑菌物质由于具有高效无毒、来源广泛等优点, 目前，在食品保藏、防腐、疾病治疗等方面逐渐引起人们重视。本文综合国内外的研究成果，对生物抑菌物质进行综述，以期为生物抑菌剂的进一步开发利用提供依据。

关键词: 马铃薯, 马铃薯, NaCl处理, 绿变控制, 龙葵素, 光照

Abstract: At present, antibacterial material gradually aroused people's attention in food preservation and anti-corrosion,disease treatment because of its efficient non-toxic, wide source etc. This article synthesizes the current biological antibacterial substance of domestic and foreign research results are reviewed. In order to provide basis for further development and utilization of biological antibacterial agent.
