Abstract:
Chemical constituents of the green pepper oleoresin made from alcohol and ethyl acetate were analyzed by using the gas chromatography-mass spectrometry (GC-MC), and identified by their mass spectra, and their relative percentage was calculated from the GC peak areas. Fifty-eight compounds were identified, accounting for 94.71% and 97.36%of the total detected constituents, respectively. The major constituents identified from the two oleoresin include piperine,caryophyllene, piperanine, D-limonene,δ-elemene,caryophyllene oxide and ledene oxide-(II).
