Abstract: The nutritional value and ingredients in tender leaf-bud of wild Bretschneidera sinensis were examined according to relevant national standards, and compared with common vegetables by the literature query. The results showed that the contents of protein, fat, water, crude fiber and ash in tender leaf-bud of Bretschneidera sinensis were 26.7 g/100 g, 2.9 g/100g, 75.3 g/100 g, 3.0% and 8.0%, respectively. The content of ascorbic acid was 1.27 mg/100g. The contents of mineral elements Ca, P, Mg, Mn, Fe, Cu, Se and Zn were 72.34, 79, 34.67, 0.47, 3.02, 0.38, 0.00165 and 0.21 mg/100 g, respectively. There were 16 kinds of amino acid in it with the total content 3599 mg/100g, and nitrate and nitrite were not detected in it. It was rich in selenium with high nutritional value, and had the good edible value and the health care function.
